We see a lot of people in our Facebook group, Aussie Low Carb Community, looking for a breakfast option that doesnβt involve eggs. These keto cheesecake muffins are an excellent grab and go breakfast choice and they are not eggy at all. We love to cook up a batch of these and store them in the freezer. That way when we donβt have time for breakfast, we can grab a muffin out of the freezer, defrost and warm and then we are good to go.

Keto Cheesecake Muffins
Pecan is one of our favourite nuts to use as we just love their flavour. These are a great option to give to your non keto family members as they are delicious. These are our favourite sweet treat and we love to have some stored in the freezer when we are craving something sweet.
These are also an excellent option to take for a work morning tea or a pot luck. They will quickly become everyoneβs favourite, even the biggest keto nay-sayers.
In 2018, we made these muffins at Ketofest as part of the cooking demonstrations. We had some much fun making them and were so happy with the response we got from everyone that tried them. They were a big hit.
Pecans on Keto
Since starting our keto lifestyle 4 years ago, we have fallen in love with pecans. They are definitely our favourite nut.
We love nuts on our keto lifestyle. I love to snack on them sometimes, they are great for flours and we both also love nut butters. If you are looking for some ideas on how to use nuts on your keto lifestyle, make sure you check out the best nuts on keto.
We love to create recipes using pecans and here are some of our favourites.

Our favourite Keto muffin recipes
I believe we have 3 of the best keto muffin recipes out there. These cheesecake muffins, breakfast muffins and keto blueberry muffins are all just so good. We cooked the cheesecake muffins and breakfast muffins at Ketofest 2018 and they were both a massive hit. All of these muffins are great for the kids and have been loved by all our non-keto family and friends.
Here is a list of some of our favourite keto muffin recipes;

Low Carb Baking
Baking your favourite desserts and cakes using low carb replacement ingredients can be tricky. When you start replacing flour with low carb replacements like almond flour and coconut flour, itβs important to know they donβt work the same as normal flour.
When using sweeteners in place of sugar itβs important to check if the sweetener acts as a 1:1 replacement. The Sukrin sweeteners we love are 1:1 and act the most like sugar of all the sweeteners we have tried.
Even though these things make keto baking more difficult, it is really easy to find a keto version of most of your favourite baked goods.

Keto Sweeteners
We love to use Sukrin sweeteners in our keto baking and these keto pecan cheesecake muffins. We have tried loads of the sweeteners available on the market and have found this to be the best tasting option with no bitter after taste. Our family and friends, who are not keto, love our keto baking too when it is made with Sukrin. Also, it is made with our preferred sweeteners, a combination of stevia glycosides and erythritol.
Australians! Donβt worry, the Sukrin products are available for us too. If you are interested check out Sukrin Australia.
Our favourites from the Sukrin products are;
- Sukrin 1 β which substitutes one for one for white sugar
- Sukrin Gold β which substitutes one for one for brown sugar
- Sukrin Melis β which substitutes one for one for icing or powdered sugar
- Sukrin Gold Fibre Syrup β this reminds me of golden syrup that we use in baking in Australia. It tastes delicious and is great for making any caramel recipes

Tips
- We love Sukrin Sweetener
and Sukrin Gold works really well in these muffins, as it is a brown sugar substitute. Australians! Donβt worry, the Sukrin products are available for us too. If you are interested check out Sukrin Australia.
- Use your preferred nuts if you donβt have pecans available
- It is much easier to cut the cream cheese straight out of the fridge to get nice uniform pieces
- These muffins freeze well and should be stored in the fridge or freezer, just wrap them well
Suggestions
- I love to warm the muffin slightly in the microwave or oven before eating it as it makes the cream cheese nice and soft and gooey.

Ingredients
- 1 cup almond flour
- 1 tsp baking powder
- Β½ cup brown sugar substitute (we use Sukrin Gold)
- 1 tsp ground cinnamon
- Β½ cup pecans (chopped)
- 1 tsp vanilla extract
- 4 eggs (large)
- 250 g cream cheese (8oz)
- salt
Instructions
- Preheat the oven to 160C/320F and prepare your muffin moulds or cases. You will need to grease your tin. We use a silicon mould as they come out very easily and do not require any greasing
- In a bowl combine almond flour, baking powder, cinnamon, pecans, sugar substitute and a pinch of salt
- Chop cream cheese into small cubes
- In a jug whisk together eggs and vanilla with a fork
- Add the egg mixture to the dry mixture and stir to combine
- Sprinkle the cream cheese cubes into the mixture. Take some time to do this to ensure they are all separated and not clumped together
- Divide the mixture into your muffin moulds
- Bake in the oven for 20-25 minutes or until they are golden brown and cooked through

Probably the best keto muffin Iβve had. No after taste. Followed recipe exactly. Next time I think I would blend half the cream cheese into the batter. Just seems like a lot of chunks. Delicious!
Thanks Amy. Glad you enjoyed it. We love lots of cream cheese chunks in ours but your method would work too
This really looks delicious, I will try to make one..thanks for sharing!
This recipe is delicious! A definite keeper! Always have some in my freezer! Thanks Erika and Dan! π
We made some of these today and had forgotten just how good they are. We have some in our freezer now too.
These are amazing! I substituted the sugar free brown sugar with Lankanto golden monk fruit sweetener and it worked spectacularly. I used the same measurements as in the recipe. This is a decadent and luxurious muffin.
Awesome. Glad you love them as much as we do
Hello just wondering if I can substitute with coconut flour I only have 1/2 c of almond and Iβm all ready to cook …. please someone help
Hi, Coconut flour is unlikely to work. It absorbs way more liquid than almond flour does. Other option would be to make half a batch instead. Also coconut flour and almond flour are not 1 for 1, you would need to use less coconut flour. Just some tips.
Super quick and easy recipe for amazing muffins! Full of flavor and just the right amount of sweetness. My family loves them! Thanks for the recipe.
So glad you like this recipe. It is our most popular recipe. It’s a big winner with all the family.
Delicious…….. I add maple extract instead of vanilla. So good with your morning coffee.
Oh yum. Sounds great. Glad you enjoy them.
These came out really well. I doubled the recipe, used 1 less egg, used only 3/4 of the recommended amount of sweetener- Swerve, and used 1/2 almond flour, 1/2 cassava flour. Next time though I will use the full amount of Swerve. Thanks for a great recipe.
So glad you liked them.
I made these today and they were great!! Would like to make muffins with cream cheese and chocolate chips..
So glad you enjoyed them Michelle. Chocolate chips make everything better don’t they?
Can I use Blanched Almond Flour? ,I do not use Almond meal as,I am allergic to …Almond skins .
Hi Kathleen, yes we use blanched almond meal (which is what we have available in Australia), blanched almond flour would be fine. Enjoy!
These are super delicious, I only switched out the pecans for walnuts. Everything else I followed exactly as recipe stated. My boyfriend had no clue they were for my keto lifestyle when he demolished 3 of themπ§
I love it when non keto boyfriends and husband’s love our recipes. Such a compliment.
Good idea to place cubed cream cheese (separated )in the freezer for about 15 min before adding. That way they are more evenly distributed!
A winner! Thank you!
Great tip thanks
Hi,
Have just ordered the Sukrin Gold through your link. I also live in Australia and didn’t previously know where to get this from. So thanks for that. Looking forward to trying your recipe. Cheers,
π
Hi Kathryn, thank you so much for your comment! We absolutely love the Sukrin products and are so happy they are available here again. Glad we could help you out.
Made these today and they are superb!
I am in Peru now, and couldn’t find brown sugar substitute, so I used Gentle sweet, and grated abut 1TB of 100% chocolate bar into the mix.
They are soon scrumptious I can’t wait to try as written to get the “caramel hint”
Thanks for sharing!
In Peru – Awesome! Thank you so much for your comment An’e. Adding chocolate to anything is usually a good thing.
Can I use regular swerve sweetener in place of brown sugar?
We have only made it using the brown sugar replacement. You could try it with regular swerve. It will probably work but likely wonβt have the same caramel Flavour or dark colour
I just pulled these out of the oven and I’m having one with a cup of coffee – they are DELICIOUS! Only change is I used Truvia Brown Sugar Blend because I couldn’t find the brown sugar at our local store that’s mentioned in the recipe. Thank you for sharing this wonderful recipe! Will definitely be making again!
Hi Mary, we are so glad you enjoyed them. Any brown sugar blend will work. We have recently heard that swerve have a brown sugar substitute now too. As we are in Australia, we have to order in the Sukrin. Definitely can’t buy it at the supermarket.
Made the muffins using Coconut Palm Sugar in place of the brown sugar. Couldnβt wait until they cooled completely to taste one! Yummy!!!
Hi Eva, so glad you enjoyed our muffins. They are yummy aren’t they! Good to know they worked with coconut palm sugar. In case anyone else is curious I just wanted to mention that coconut palm sugar is not a low carb sweetener, and will impact your blood sugar the same way that regular sugar can.
I hear swerve has a brown sugar now, im wondering if I could use that if a purchase it, and if it would be sweeter? Would i use the same amount?
Hi Valorie, I have heard the same. Iβm not sure if itβs 1:1 like the sukrin stuff is. If it says itβs a 1:1 replacement for brown sugar, then yes, you should be able to use the same amount. We havenβt tried it though so canβt say for sure.
So delicious!!!! Easy and quick to make with an amazing taste!! Thanks for sharing this yummy recipe! My whole family loved them! π
Thanks Suzanna. So glad you enjoyed them.
Pecan Cheesecake Muffins are beautiful.
They keep really well & my family have asked when I am making more.
Thanks for the feedback – great to hear Cheryl!

Have you actually made these? I never understand people who rate things, what… by a picture? It’s frustrating for those of us who actually want to know if they are good. Not trying to be mean, but bake then rate.
Really, read the other replies and they tell you if they are good or not, smh
I have made these several times and they are delicious. You should try it!
