Keto Eton Mess is the perfect summer dessert. You can whip it up in less than 15 minutes and impress your famuly and friends.

    What is Eton Mess?

Eton mess is a traditional English dessert that combines softly whipped cream, strawberries and crunchy meringue pieces. The crunchy meringue is really what makes this such a popular dessert and also quite high in sugar!

One of the reasons Eton mess is such a popular dessert is that it is so easy to put together. If you purchase the meringue pieces, it can come together in 10-15 minutes, with no need to turning on an oven. It really is an impressive dessert with very little work involved – what could be better!

Enter our keto Eton mess, which is still crunchy and delicious, without all that added sugar. By using our new favourite meringue alternative, Noosa Cookhouse collagen crumbles, you can still enjoy this fresh and summery dessert.

    Noosa Cookhouse Collagen Crumbles

We are so excited to share with you our latest find from Low Carb Emporium, these collagen crumbles from Noosa Cookhouse Kitchen. Made from dehydrated organic coconut ice cream, added macadamia nuts and hydrolysed collagen. This snack makes a perfect topping for any desert, cereal or just eat straight from the pack. This is delicious!

It is honestly like the crunchy keto-friendly meringue of your dreams! Dan is a big lover of things like meringue, pavlova and marshmallows, but all of these things tend to be loaded with sugar. Enter these crunchy little collagen crumbles with only 2-3g of carbs per (very generous) serve.

Low Carb Emporium is the premium online low carb website in Australia. They launched in October 2017 and have grown to be the stockists of the best low carb products Australia has to offer. We love Low Carb Emporium and place an order with them every couple of months. Although at the moment it feels like we are ordering more like every couple of weeks.

Jack and Yvonne have gone from shipping products out of their garage to now needing a warehouse to distribute all our favourite products. We were lucky enough to be invited to check out their new premises and were impressed by all the wonderful products they have in stock now.

    Keto Summer Desserts

Summer is the perfect time for lovely fresh fruit, and we love to enjoy some berries at this time as they are in season and lower in sugar. A favourite dessert can be as simple as some fresh berries served with whipped or double cream – perfection! Or you can take that simple dessert to the next level by converting it into this keto Eton mess!

    Tips

    • You can use strawberries or other fruit if you prefer. I just love the pop of colour and tartness from raspberries.
    • This is best made just prior to serving, as the collagen crumbles will soften once exposed to the cream. You will find the next day the crunch has been lost.
    • If you prefer you could make one large bowl of Eton mess rather than individual servings.

    Suggestions

    • If you prefer not to have fruit you could make this into a chocolate flavoured version by adding some grated dark chocolate in place of the raspberries. This would pair really well with the chocolate collagen crumbles.
    • Alternately it would be great with coffee or sugar-free caramel rather than fruit also – the options are endless!
    • It would be really pretty to decorate the Eton mess with freeze dried raspberries crumbled or a sprinkle of frees dried raspberry powder for a real pop of colour.

    Ingredients

    • 45 g Noosa Cookhouse coco raspberry collagen crumbles (1 packet)
    • 1 punnet raspberries (125g)
    • 1 tbsp powdered sweetener
    • 1½ cups pure cream
    • 1 tsp vanilla extract

    Garnish options

    • extra fresh raspberries
    • freeze-dried raspberries

    Instructions

    • Add the cream and vanilla extract to a large bowl and whip to soft peaks
    • In a small bowl, place the raspberries and the powdered sweetener. Use a fork to mash the raspberries with the sweetener until it is similar to a puree/jam consistency. You can then strain the mixture to remove the seeds if you prefer, we didn't do this
    • Gently fold the raspberry mixture through the whipped cream to create a rippled effect. Try not to combine it completely
    • Take your four serving glasses and place a large spoonful of the raspberry and cream mixture into the bottom of each glass
    • Set aside some of the collagen crumbles for garnish
    • Take the remaining crumbles and divide them between the four glasses. You may need to break up any large pieces in your hand as you sprinkle them in
    • Divide the remaining cream mixture across the four glasses on top of the collagen crumbles
    • Garnish each Eton mess with the reserved collagen crumbles and fresh or freeze-dried raspberries as desired
