Summer is the perfect time for lovely fresh fruit, and we love to enjoy some berries at this time as they are in season and lower in sugar. A favourite dessert can be as simple as some fresh berries served with whipped or double cream – perfection! Or you can take that simple dessert to the next level by converting it into this keto Eton mess!
As we celebrate Christmas in the summertime in Australia we tend to do more entertaining at this time of year, and that can mean desserts! Here are some of our favourite keto-friendly, low sugar desserts that are perfect for summer entertaining;
Tips
- You can use strawberries or other fruit if you prefer. I just love the pop of colour and tartness from raspberries.
- This is best made just prior to serving, as the collagen crumbles will soften once exposed to the cream. You will find the next day the crunch has been lost.
- If you prefer you could make one large bowl of Eton mess rather than individual servings.
Suggestions
- If you prefer not to have fruit you could make this into a chocolate flavoured version by adding some grated dark chocolate in place of the raspberries. This would pair really well with the chocolate collagen crumbles.
- Alternately it would be great with coffee or sugar-free caramel rather than fruit also – the options are endless!
- It would be really pretty to decorate the Eton mess with freeze dried raspberries crumbled or a sprinkle of frees dried raspberry powder for a real pop of colour.

This keto Eton mess is the perfect combination of softly whipped cream, fresh berries and the crunchy collagen crumbles. This dessert is honestly so easy and will impress even your non-keto family and friends. Grab a couple of packets of the Noosa Cookhouse collagen crumbles from Low Carb Emporium, and you are all set for a delicious and easy dessert in under 15 minutes!

Ingredients
- 45 g Noosa Cookhouse coco raspberry collagen crumbles (1 packet)
- 1 punnet raspberries (125g)
- 1 tbsp powdered sweetener
- 1½ cups pure cream
- 1 tsp vanilla extract
Garnish options
- extra fresh raspberries
- freeze-dried raspberries
Instructions
- Add the cream and vanilla extract to a large bowl and whip to soft peaks
- In a small bowl, place the raspberries and the powdered sweetener. Use a fork to mash the raspberries with the sweetener until it is similar to a puree/jam consistency. You can then strain the mixture to remove the seeds if you prefer, we didn't do this
- Gently fold the raspberry mixture through the whipped cream to create a rippled effect. Try not to combine it completely
- Take your four serving glasses and place a large spoonful of the raspberry and cream mixture into the bottom of each glass
- Set aside some of the collagen crumbles for garnish
- Take the remaining crumbles and divide them between the four glasses. You may need to break up any large pieces in your hand as you sprinkle them in
- Divide the remaining cream mixture across the four glasses on top of the collagen crumbles
- Garnish each Eton mess with the reserved collagen crumbles and fresh or freeze-dried raspberries as desired
