Add the cream and vanilla extract to a large bowl and whip to soft peaks
In a small bowl, place the raspberries and the powdered sweetener. Use a fork to mash the raspberries with the sweetener until it is similar to a puree/jam consistency. You can then strain the mixture to remove the seeds if you prefer, we didn't do this
Gently fold the raspberry mixture through the whipped cream to create a rippled effect. Try not to combine it completely
Take your four serving glasses and place a large spoonful of the raspberry and cream mixture into the bottom of each glass
Set aside some of the collagen crumbles for garnish
Take the remaining crumbles and divide them between the four glasses. You may need to break up any large pieces in your hand as you sprinkle them in
Divide the remaining cream mixture across the four glasses on top of the collagen crumbles
Garnish each Eton mess with the reserved collagen crumbles and fresh or freeze-dried raspberries as desired
