We love to make this Biscoff rocky road around Christmas time to share with family and friends when entertaining and it also makes a perfect gift.
What is biscoff?
Lotus Biscoff cookies had become extremely popular over recent years and you may have seen all sorts of Biscoff flavoured products in the supermarket recently. They are a crisp cookie with a distinctive caramelised flavour. They pair particularly well with coffee, and the name is actually a combination of biscuit and coffee!
Even more popular than the actual Lotus Biscoff cookies, is the Lotus Biscoff spread! You could call a cookie butter, think peanut butter but with cookies instead of peanuts. Just like nut butter, it comes in a smooth or crunchy texture. The crunchy version has small cookie crumbs throughout. We like to use the smooth version in our biscoff rocky road.
In Australian supermarkets, you can find the Lotus Biscoff original cookies and cream-filled sandwich cookies with other sweet biscuits and cookies. The Lotus Biscoff spreads can be found with other spreads like Nutella, jam etc.
Ingredients for making biscoff rocky road
To make this Biscoff rocky road you only need a few ingredients, which are readily available in most major supermarkets. We like to use Whittaker’s milk chocolate in this rocky road as we prefer its stronger flavour.
In Australian supermarkets, we found the mini marshmallows in the baking section of the supermarket, not with the normal marshmallows. If you are not able to find mini marshmallows you can cut up regular marshmallows into quarters. We find using scissors is the easiest way to cut them.

Suggestions
- You can decorate this biscoff rocky road however you like. We like to have whole biscuits and drizzle of white chocolate on top. You could use a drizzle of your favourite chocolate or even more Biscoff spread.
- This Biscoff rocky road would be great for gifting! Simply wrap a few pieces in some cellophane or a small gift box.

Ingredients
- 250 g milk chocolate
- ½ cup Lotus Biscoff spread (smooth)
- 150 g Lotus Biscoff cream filled sandwich biscuits (1 packet)
- 1½ cups white mini marshmallows
- 30 g white chocolate
- 8 Lotus Biscoff biscuits (the rectangle ones for decorating)
Instructions
- Line a square 8×8 baking pan with non-stick baking paper.
- Break up the chocolate into pieces and add it to a heatproof bowl with the Biscoff spread.
- Microwave the chocolate to melt together with the Biscoff spread. It is best to do this in 20-30 second increments, stirring in between. It is ready once it is completely smooth.
- While the chocolate is melting, roughly chop up the packet of Biscoff sandwich biscuits into bite-sized pieces.
- Once the chocolate is completely melted and smooth, add in the chopped biscuits and mini marshmallows. Stir well to ensure everything is well coated in the chocolate.
- Add the chocolate mixture to the prepared pan and spread out into an even layer.
- Place the rectangle on top of the rocky road mixture and gently press down. They are fragile so may crack, don't worry as we are cutting it up later anyway.
- Melt the white chocolate in a small bowl in the microwave, using the same method.
- Using a teaspoon, lightly drizzle the melted white chocolate over the whole rocky road.
- Place in the fridge until it is completely set. At least a few hours or overnight.
- Once it is set, remove from the pan and cut into 16 squares and it is ready to serve.
