    Keto Tuna Salad Lettuce Cups

    Keto tuna salad is the easiest and quickest keto lunch options there is. Tuna & mayo together are delicious and with the crunch of the lettuce cup, perfect.

    If you are someone that doesn’t have time to spend making fancy lunches every day, you will quickly become a fan of keto tuna salad. These lettuce cups are so quick and easy to make, even the kids can do it. Keto tuna salad is a great lunch box option for both kids and adults.

    Keto Tuna Salad Lettuce Cups

    Erika has always loved having tuna salad for lunch, even before we began our ketogenic lifestyle. She used to love making a tuna melt on some bread, but now we use the lettuce cup to hold the salad. We are not big fish eaters at Have Butter will Travel and have always struggled to get seafood into our diet. Keto tuna salad is a great way to get our intake of omega 3’s.

    Tuna

    According to draxe.com there are several great benefits to eating tuna regularly. These include:

    • High in Protein
    • Aids in Weight Loss
    • Promotes Thyroid Health
    • Boosts Brain Function
    • Rich in Antioxidants
    • Reduces Inflammation

    It is important to note that not all canned/tinned tuna is created equal. When choosing tinned tuna you want to look for –

    • Wild
    • Pole and line caught
    • In spring water or olive oil

    This will ensure you have the highest quality tuna. It may not always be feasible to get wild or pole and line caught, but we would always recommend avoiding tuna in vegetable oils.

    Other Salad ideas

    Tuna salad is not the only option that you could serve in these lettuce cups. If you are looking for some great alternatives you can substitute the tuna for either egg or shredded chicken. We love to mix it up with these two options.

    Lettuce Cups

    Lettuce is our favourite way to replace bread. It is really easy and very low carb to use a lettuce cup or two to create a low carb sandwich. We love to use two iceberg lettuce cups to replace the bun on a burger. Another great idea is to top a lettuce leaf with your favourite low carb sandwich filling. So delicious.

    For our keto tuna salad lettuce cups we like to use cos or romaine lettuce. When using lettuce for our burgers we prefer iceberg. The key when choosing a lettuce to use as a lettuce cup is that it is strong and crunchy and able to hold all your fillings.

    Making your own Mayo

    Making your own mayo may sound like a bit of a hassle, but check out this quick and easy method. Once you give it a go you won’t want to be buying store bought again.

    If you would prefer to buy your own mayo we recommend Primal Kitchen or Sir Kensington as they are both made using avocado oil. In Australia the Sir Kensington’s avocado oil mayo is available from iHerb with free shipping.

    Ingredients

    • 185 gm tinned tuna in springwater (drained) (150gm or 5oz net)
    • 2 tbsp mayonnaise
    • 1 tbsp chives (chopped)
    • 2 tbsp dill Pickles (chopped)
    • 1 tsp dijon Mustard
    • 4 lettuce leaves (cos, romaine or iceberg)
    • salt and pepper
    • avocado slices to serve (optional)

    Instructions

    • Combine all ingredients except the lettuce (and avocado if using) in a bowl and stir until thoroughly mixed
    • Distribute the tuna salad between the 4 lettuce leave cups

      Excellent way to serve Tuna, as the fishy taste is reduced. Love the chives, pickles and dijon flavor. Perfect low carb lunch with Olinas seed crackers. Thank you Erika & Dan.
