    Mexican chicken marinade

    This Mexican chicken marinade is so easy to throw together, yet absolutely packed with flavour. Perfect for your grilled chicken.

    This Mexican chicken marinade is so simple to put together, yet is flavour packed! We love to marinate chicken breasts with this Mexican chicken marinade and then grill it and serve it with a salad. If you like to meal prep, you can marinate the chicken and then grill it on a Sunday night to add to delicious lunches or dinners throughout the week. Cooked chicken using this Mexican chicken marinade is so versatile and can be used in salad, tacos, nachos, sandwiches or wraps.

    This Mexican chicken marinade is so simple to put together, yet is flavour packed! We love to marinate chicken breasts with this Mexican chicken marinade and then grill it and serve it with a salad.

    How to serve Mexican marinated chicken

    This Mexican chicken marinade is perfect to marinate chicken breasts. We like to grill them and then serve them in a salad with shredded lettuce, tomatoes or salsa, avocado or guacamole, fresh coriander leaves (cilantro) and any of your other favourite salad ingredients. It would also be perfect to serve in tacos, nachos, sandwiches or wraps.

    Chipotle pepper in adobo sauce

    We love to use chipotle pepper in adobo sauce in this Mexican chicken marinade as they provide so much flavour and smokiness. They really enhance the flavour of so many Mexican dishes, including our delicious chorizo chilli. We don’t like our food too spicy, so don’t be worried if you are the same. These chillies only provide a gentle heat.

    For this Mexican chicken marinade I used the chopped chipotle pepper in adobo sauce. Usually the jar of chipotle pepper in adobo sauce, the peppers are whole in the sauce. If you are unable to find the chopped or diced version, you can just take the peppers out of the jar or can and finely chop then. Then just measure out two tablespoons of the chopped peppers in the sauce.

    Steps for making Mexican chicken marinade

    Butterflied chicken breast
    Butterfly the chicken breasts so you have 2 thinner pieces
    Marinade in a rectangle glass jar
    Combine the marinade ingredients in a container
    Chicken breasts coated in the marinade
    Add the chicken to the marinade and make sure it is all coated

    Tips & Suggestions

    • We like to use chicken breast with this Mexican chicken marinade, but it would also work well with skinless, boneless chicken thighs. If you want to use bone in chicken pieces, you could extend the marinating time up to 8 hours.
    • We were able to find chopped chipotle pepper in adobo sauce in the Mexican section at Woolworths. There are two brands, La Morena and La Costena. If you can only find whole chipotle pepper in adobo sauce, just chop a few up to make up two tablespoons with the sauce.
    • We like to serve this Mexican marinated chicken as part of a taco salad with chopped lettuce, tomatoes, avocado, grated cheese and sour cream. You can also use it in tacos, nachos, burritos, wraps or sandwiches.

    Make it Low Carb

    • This recipe is already low carb. Serve it will a salad or cheese shell tacos for a delicious low carb meal.

    Ingredients

    Mexican chicken marinade

    • 2 tbsp chipotle peppers in adobo, chopped
    • 1 tbsp avocado or olive oil
    • 1 tbsp lime juice
    • 2 cloves garlic, minced
    • ½ tsp salt
    • ½ tsp ground cumin

    Chicken

    • 600 g chicken breast (approximately 2 large breasts)

    Instructions

    Mexican chicken marinade

    • Combine all the ingredients together in a container or bowl that is large enough to accomodate the chicken.
    • Prepare the chicken breasts (see below) and then place in the marinade. Move them around to ensure they are completely coated all over. Cover and place in the fridge for 4 hours to marinate.

    Chicken

    • Slice through the middle of the chicken breast to create two thinner pieces of chicken that are both still the shape of the chicken breast.
    • Once the chicken is marinated, heat a large non-stick frying pan or skillet over medium heat.
    • Once the pan is hot, add the chicken breast pieces and cook for 4-5 minutes on each side, or under cooked through. Be careful not to have the pan to hot as the marinade may start to burn before the chicken is cooked through.
    • Once the chicken is cooked it is ready to serve.
