    Cloud bread, also known as Oopsie bread, is a great staple for a low carb lifestyle. It is super low in carbs and makes a perfect sandwich. We love cloud bread with bacon, lettuce, tomato and mayo, it is so tasty! You will not regret learning how to make cloud bread. It’s great when you want something you can pick up with your hands, like a burger or a sandwich.

    How to make Cloud Bread

    Cloud bread is great to use as a pizza base or sandwich two together as a hamburger bun. They are light and airy but hold together well. Experiment by topping them with your favourite seeds, herbs or spices on top – the options are endless.

    Equipment

    • Electric Whisk or Beaters
    • Baking tray
    • Baking paper

    Ingredients

    • 2 Eggs
    • 75g Cream Cheese (softened)
    • 1 tsp Ground Psyllium Husks
    • 1/2 tsp Baking Powder
    • 1/2 tsp Cream of Tartar
    • Salt
    • Seeds or herbs for topping (optional)

    Serving Suggestions

    We love to use cloud bread to make a sandwiches. Two sandwiched together makes a great BLT (bacon, lettuce and tomato with mayo of course!).

    Cloud bread can be used as a pizza base for mini individual pizzas. Top the cooked cloud bread with your favourite pizza toppings and then grill them to melt the cheese.

    We LOVE vegemite on toast in Australia and it is something that is really missed when not eating conventional bread. Cloud bread toasted in the toaster and spread with butter and vegemite really hits the spot.

    We have also used cloud bread for a great bun substitute for your hamburger. They are actually quite sturdy and hold up pretty well.

    Steps for how to make cloud bread

    1. Preheat oven to 160c/320f
    2. Line a baking tray with baking paper
    3. Seperate the eggs, and place the yolks in one bowl and the whites in another
    4. Whisk the egg whites with the cream of tartar and a pinch of salt until they form stiff peaks, set aside
    5. In the other bowl beat the egg yolks and cream cheese until combined
    6. Add the psyllium husk powder and baking powder to the cream cheese mixture and stir to combine
    7. Fold the egg whites into the into the cream cheese mixture gently to try to keep it light and airy
    8. Divide the mixture into round 4 piles on the baking tray
    9. Sprinkle with any seeds or herbs if you like
    10. Bake for 20-25 minutes until they are golden brown
