Cut your peaches in half around the seam and remove the pit. Place cut side up in a single layer in am oven-proof dish.
In a small jug or bowl, melt the butter in the microwave. It should only take 30 seconds to one minute.
Add the honey and vanilla extract to the melted butter and stir to combine.
Drizzle the butter mixture over the peaches evenly.
Roast peaches in the oven for 25-30 minutes, until they are soft and starting to brown on top.
Remove peaches form oven and serve while hot or warm.

Tips & Suggestions
These roasted peaches are best served warm because there is some butter in the sauce which will solidify as it cools. You can reheat them gently on the stovetop or in the microwave.
We like to serve these baked peaches for dessert with cream, yoghurt, iccream or custard. You can also serve them for breakfast with chia pudding or yoghurt and granola.
To remove the pit from the peach, slice around the peach at the seam and all the way to the pit. Gently twist to operate the two peach halves and then gently remove the pit.
