Instructions
Mexican chicken marinade
Combine all the ingredients together in a container or bowl that is large enough to accomodate the chicken.
Prepare the chicken breasts (see below) and then place in the marinade. Move them around to ensure they are completely coated all over. Cover and place in the fridge for 4 hours to marinate.
Chicken
Slice through the middle of the chicken breast to create two thinner pieces of chicken that are both still the shape of the chicken breast.
Once the chicken is marinated, heat a large non-stick frying pan or skillet over medium heat.
Once the pan is hot, add the chicken breast pieces and cook for 4-5 minutes on each side, or under cooked through. Be careful not to have the pan to hot as the marinade may start to burn before the chicken is cooked through.
Once the chicken is cooked it is ready to serve.

Tips & Suggestions
We like to use chicken breast with this Mexican chicken marinade, but it would also work well with skinless, boneless chicken thighs. If you want to use bone in chicken pieces, you could extend the marinating time up to 8 hours.
We were able to find chopped chipotle pepper in adobo sauce in the Mexican section at Woolworths. There are two brands, La Morena and La Costena. If you can only find whole chipotle pepper in adobo sauce, just chop a few up to make up two tablespoons with the sauce.
We like to serve this Mexican marinated chicken as part of a taco salad with chopped lettuce, tomatoes, avocado, grated cheese and sour cream. You can also use it in tacos, nachos, burritos, wraps or sandwiches.
