Prepare your fillings (see our favourite options in the post)
Heat the frying pan over medium-high heat
Once the frying pan is hot add the cooking fat
Add the egg mixture to the pan and tilt the pan from side to side to cover the base
Using the spatula move the egg mixture around to allow the liquid egg to get in contact with the base of the pan. Tilting the pan to ensure the egg mixture always covers the base of the pan completely
When the egg mixture is nearly all cooked sprinkle the fillings over one half of the pan
Then flip half of the omelette over to cover the fillings and create a half moon shape
Cook for 1-2 minutes, or until your fillings are heated through and cheese melted
