We love eggs. Just in case you have noticed yet. Erika taught me how to make an omelette very early on in our relationship and it’s one of the things I still make for myself. We love to have an omelette for breakfast or even for a lazy dinner.

What is not to love about eggs! They are little nutrition powerhouses which contain good quality protein, healthy fats as well as a range of vitamins and minerals. They are a perfect inclusion to a ketogenic lifestyle as they are so versatile as well as being quick and easy to prepare.
Over the month of May we will be covering our favourite ways to prepare eggs in step-by-step detail. So don’t worry if you are not a whiz in the kitchen, as we will guide you through the most delicious and easiest ways to prepare scrambles, omelette, poached, boiled and fried eggs.
How to Make an Omelette
Omelettes make the perfect vessel for using up any leftovers including; cooked vegetables, bacon, sausage and cheeses. They are perfect for a night when you really can’t be bothered cooking, as they turn eggs and leftovers into a tasty and filling meal in minutes.
There are so many flavour combinations it is endless and I have even seen sweet omelettes popping up on instagram made with berries, cinnamon and stevia.
Equipment
Ingredients
- 3 Eggs per omelette
- 1 tbsp of your preferred cooking fat (we like ghee or bacon grease)
- Fillings of your choice (if they need to be cooked it is best to do this first)
- Salt and pepper
Serving Suggestions
Here are some of our favourite omelette flavour combinations –
- Classic combination of cheese and fresh chopped chives
- Chopped crispy bacon, cheddar cheese and chopped pickled jalapeños
- Pizza style – pepperoni, olives, mushrooms, onions and cheese
- Roasted capsicums (peppers) or tomatoes and crumbled feta cheese
- Leftover sausage or chorizo with cheese and onions
- Sautéed capsicums (peppers), onions and mushrooms
- A spoonful of our chorizo chilli with cheese, topped with a dollop of sour cream
Steps
- Break the eggs into the jug and whisk to combine
- Season the egg mixture with salt and pepper
- Prepare your fillings (see our favourite options below)
- Heat the frying pan over medium-high heat
- Once the frying pan is hot add the cooking fat
- Add the egg mixture to the pan and tilt the pan from side to side to cover the base
- Using the spatula move the egg mixture around to allow the liquid egg to get in contact with the base of the pan. Tilting the pan to ensure the egg mixture always covers the base of the pan completely
- When the egg mixture is nearly all cooked sprinkle the fillings over one half of the pan
- Then flip half of the omelette over to cover the fillings and create a half moon shape
- Cook for 1-2 minutes, or until your fillings are heated through and cheese melted

To get more fat into my omlettes I whisk 1 egg and about 60mls of cream.
Into the fry pan and sprinkle with small dollops of cream cheese and small pieces of thinly sliced smoked salmon.
