This easy sausage tray bake recipe is a great family friendly weeknight dinner. Everything is cooked in the oven on one tray, so less washing up, which is also a win.
Preheat your oven to 200C/400F and line a large baking tray with non-stick baking paper.
Cut the potatoes into 1-2cm pieces and spread evenly on the baking tray.
Drizzle the olive oil over the potatoes and sprinkle with the salt, oregano, pepper and garlic powder. Toss the potatoes to ensure they are evenly coated and spread out evenly.
Place in the oven and roast for 20 minutes.
While the potatoes are roasting, cut the remaining veggies into 1-2cm pieces.
After 20 minutes, remove the tray from the oven and add the chopped veggies to the tray. Toss the veggies and potatoes together to coat in the oil and spices. Spread out again in a even layer.
Roast in the oven for another 20 minutes.
After 20 minutes, remove the tray from the oven. toss the veggies and spread out in an even layer. Place the chipolatas on top of the veggies, spread out evenly.
Roast in the oven for another 10 minutes.
After 10 minutes, remove from the oven and sprinkle with the parmesan cheese. Place back in the oven for another 5-10 minutes, until the cheese is melted and the sausages slightly browned.You may need to pop the grill/broiler on at the end to brown the sausages.
