Finely dice all the salad ingredients, except the feta, and place into a large bowl. Toss to combine.
Make the salad dressing (see below).
Add the dressing to the salad and toss again. It is now ready to serve.
Salad Dressing
Place all the dressing ingredients in a small jar with a lid. Tighten the lid and shake well for 20-30 seconds to combine the ingredients.

Tips & Suggestions
This salad pairs brilliantly with any grilled meats, seafood or chicken for a delicious meal. It is also perfect to serve bruschetta style on a piece of sourdough toast. For an easy packed lunch you could stir some tinned una or salmon through the salad also.
It is best to try and ensure all ingredients are 'chopped' or diced to a similar size, we like to finely dice the ingredients so you get a little bit of everything in every mouthful.
Once the salad is dressed, it can be stored in an airtight container in the fridge and eaten within 2-3 days.
