Combine all the ingredients together in a container or bowl that is large enough to accomodate the chicken.
Prepare the chicken breasts (see below) and then place in the marinade. Move them around to ensure they are completely coated all over. Cover and place in the fridge for 2-4 hours to marinate.
Chicken
Slice through the middle of the chicken breast to create two thinner pieces of chicken that are both still the shape of the chicken breast.
Once the chicken is marinated, heat a large non-stick frying pan or skillet over medium heat.
Once the pan is hot, add the chicken breast pieces and cook for 4-5 minutes on each side, or until cooked through. Be careful not to have the pan too hot as the marinade may start to burn before the chicken is cooked through.
Once the chicken is cooked it is ready to serve.
Notes
Chicken cut alternatives - We like to use chicken breast with this lemon chicken marinade, but it would also work well with skinless, boneless chicken thighs.
Serving suggestions - You can serve this grilled lemon marinated chicken with your favorite side salads of vegetables. It would be delicious with a Caesar or Greek salad, coleslaw, potato salad, or roasted vegetables.
Cooking tip - Be sure not to have your heat too high when grilling the chicken as the marinade may burn while the chicken is still undercooked.
Lemons - Make sure you zest the lemon before juicing it as it is much easier! We like to use a Microplane to zest the lemon, you only want the yellow part of the skin, not the white part.
