In an oven-proof baking dish, add all the ingredients except the feta and stir to combine.
Push the olives to the sides of the dish to make room for the feta block in the middle.
Place the feta block in the baking dish and turn a few times to coat in the oil and herbs etc.
Place in the oven and bake for 20 minutes.
If you would like to top of the cheese more browned you can turn on the grill/broiler for the last few minutes of the cooking time. Be careful not to let the olives burn.
Remove from the oven and serve with your favourite bread, toast or crackers.
