Keto Ham & Cheese Muffins
Everyone in the family will love these keto ham and cheese muffins (even kids and fussy husbands - trust us!). Add this recipe to your meal prep rotation this weekend and you can thanks us later.

cheddar cheese, grated
parmesan cheese, grated
Preheat the oven to 160C/320F. Grease and line your muffin trays. We prefer to use silicon muffin trays to avoid the muffins sticking, which does happen with low carb baked goods
In a large bowl place the ham, almond flour, cheeses, chives, baking powder and garlic powder. Toss all the ingredients together
In a small jug or bowl place the sour cream and eggs and whisk together to break up the sour cream and combine to a mostly smooth mixture
Add the egg mixture to the dry ingredients and stir well to combine
Divide the muffin batter between 10 muffin holes
Bake in the oven for 20-25 minutes, or until the muffins are golden brown on top and cooked through
Allow to cool for 5 minutes and then remove from the moulds and place on a wire cooking rack to cool completely
