Keto Cheesecake Bites
These keto cheesecake bites are perfect to have in the fridge for when you are wanting something sweet. At 1 gram of carb each they are pretty much perfect!
Keto, Low Carb
Cream Cheese, softened
Zest of 1 - 2 lemons
1 & 1/2
Combine cream cheese and butter in a small bowl and beat on high speed for a few minutes until smooth.
Add sweetener and zest to the cream cheese mixture and beat again to ensure the texture is smooth and creamy.
Place in the fridge for 30 mins to 1 hour until the mixture is firm enough to roll into balls.
Roll into teaspoon size balls and coat in coconut then place back in the fridge to set.
Prep time does not include setting time in the fridge.
