These Mediterranean eggs are perfect for a stay at home breakfast. There is no reason to go out for a cafe style breakfast when it is so easy to make delicious skillet eggs at home. This is a perfect keto breakfast option that is so quick and easy to make. Sometimes you feel like something different from the standard bacon and eggs for breakfast and these keto skillet eggs will really shake things up.
Mediterranean Eggs
When browsing in a thrift store, we found a small cast iron skillet and just had to buy it. It was the perfect pan to cook these Mediterranean eggs in and just so cute. The perfect size for one serve and easily accommodated 2 eggs and the sauce.
When deciding on the flavours we wanted to try for this dish, we wanted to test out some Mediterranean flavours. We love the saltiness of feta and olives and feel they pair so well with tomatoes and eggs.
Keto-friendly tomato pasta sauce
A common question in our Facebook group is what are the best options for low carb pasta sauces. We usually first check the ingredients and avoid any that contain undesirable ingredients like sugar and vegetable oils. After we have found the options with the best ingredients, then we compare the carbohydrate counts and choose the lowest one.
At Coles and Woolworths you may find the Slendier and Keep it Cleaner brand pasta sauces in the health food section, rather than with all the traditional pasta sauces. Eggs on a keto diet
Eggs are definitely the darling of the low carb world, and we absolutely love them. They are nutrient dense and a great protein to fat ratio, which means they are very filling and satiating. We include them regularly in our meals and are happy to eat them for breakfast, lunch or dinner!
Dan is happy to have fried eggs for breakfast most days, while Erika will usually go for scrambled eggs. While we love to cook eggs on their own for breakfast, we also have some wonderful recipes with eggs.

Keto breakfast options
I will admit that as much as I love eggs, sometimes I just don’t feel like them for breakfast. It is nice to have some alternative breakfast options that are low carb, egg free and also delicious. These are some of our favourite keto breakfast options that don’t contain eggs.
Chia Pudding
Chia pudding is so easy to make and can be made in a variety of flavours. We love to make our chia pudding with coconut milk, so it is also a great dairy free option. You can flavour it with cocoa, coffee or whatever your heart desires to make a delicious egg free keto breakfast.
Smoothies
Smoothies or smoothie bowls are a quick and easy low carb breakfast option that are perfect for a summer breakfast! You can use your favourite frozen berries, coconut, avocado and some collagen or protein powder to make a filling and complete keto friendly meal.
Granola
We love to make a keto granola from nuts and seeds to serve with Greek yoghurt for a delicious low carb breakfast. Keto granola is also perfect to sprinkle on top of your chia pudding or smoothie bowl. We use this granola as more of a topping/garnish than as a cereal replacement.
Tips
- You will need to use a pan that can be used on the stove and in the oven. We love the cast iron skillet we used, but a small frying pan with a metal handle will also work. If you only have a pan will a plastic handle, you can wrap it well in foil to put it in the oven.
- If you don’t like feta cheese, you can use cheddar or some goats cheese.
- When adding the eggs to the sauce, create a hole by moving the sauce to the side and adding the eggs in there.
- We recommend cracking the eggs into a cup before adding to the pan to make it easier to slide them in.
Serving Suggestions
- As is. This dish is delicious on it’s own. You can even just eat it straight out of the pan!
- With low carb bread on the side. Some of this bread toasted and dipped into the sauce. Yum!
- As part of a breakfast cook up. This will be delicious served up with some bacon, sausage and mushrooms for a big breakfast. This could easily be our one meal a day on a weekend.
- You can easily multiply the recipe up for more than one person and use a larger skillet. It may just take a little longer in the oven.

Ingredients
- ½ cup tomato pasta sauce
- 5 olives sliced
- 2 eggs
- 25 g Greek style feta (1 ounce)
- red pepper flakes (optional)
Instructions
- Preheat oven to 200C/400F.
- In a small skillet or frying pan place the tomato sauce and olives and bring to a simmer over medium heat.
- Break the 2 eggs into a cup or small bowl.
- Reduce the heat to low and gently add eggs to the skillet or pan and cook on low for 5 minutes.
- Crumble the feta on top of the eggs and sprinkle the red pepper flakes (if using) on top.
- Place in the oven and bake for 5 minutes or until egg whites are cooked through. We like the yolks runny, if you prefer then hard you will need to cook longer.
- Remove from the oven and serve immediately.
