Scrambled eggs are Erika’s favourite way to eat and cook eggs. I had never had scrambled eggs as nice as the ones Erika makes. Once you learn how to scramble eggs this way, you won’t make them the old way any more. These are so creamy and soft and delicious.

How to Scramble Eggs
Scrambled eggs are so creamy and delicious and we love them served with crispy bacon. This makes a filling and delicious meal at anytime of the day. Yes, newsflash! Eggs are not restricted to being a strictly breakfast food.
On a Sunday morning there is nothing better than some delicious scrambled eggs, perhaps with some low carb toast and a hot cup of coffee – perfection. We like to serve our scrambled eggs soft and creamy, so if you prefer a dryer scramble you may want to cook them longer.

- 2 – 3 Eggs per person
- 1 tbs Butter (Try one of our flavoured butters)
- Salt and pepper

Scrambled eggs are perfect on their own, but adding a dollop of basil pesto on the top takes them to the next level. Give this a try – you will not regret it.
Another simple trick that can take any eggs up a notch, but especially scrambled eggs, is to sprinkle some fresh chopped chives on the top. Delicious! Really you can add any of your favourite herbs and spices to scrambled eggs for some variety.
A handful of grated cheese makes for a super creamy and delicious scrambled eggs. We have added some herb and garlic flavoured cream cheese before too which was super yummy.
One favourite meal in our house is to cook up some some chopped bacon rashers in a pan until crispy, then scramble your eggs in the same pan to get all of the yummy bacon grease in your scramble. Once the eggs are cooked sprinkle in some grated cheese and chopped pickled jalapeños. Stir through and serve. This is such a filling an tasty meal.
Steps for how to scramble eggs
- Break the eggs into the jug and whisk to combine
- Season the egg mixture with salt and pepper
- Heat the saucepan over medium-low heat
- Once the saucepan has heated up add the butter
- When the butter has melted add the egg mixture
- Stir continuously with a wooden spoon and keep the heat fairly low to cook slowly
- Remove the eggs from the heat just before you think they are ready and continue to stir, as they will keep cooking from the heat in saucepan and you don’t want to over do them
- Serve and eat immediately
