Sometimes the flavour of raw garlic is just too strong and it can overpower the whole dish. A great way to add delicious garlic flavour to your meals, without that overpowering flavour, is it to have some roasted garlic in the fridge. If you have never roasted garlic before, learning how to roast garlic will change the way you cook with garlic forever.
How to roast garlic
It has a much more mild flavour than raw garlic. Roasted garlic would add delicious flavour to meatballs, flavoured butters, burgers, mayo for an aioli and any sauce for zoodles. We love to have some roasted garlic in the fridge to add to meals to add that delicious garlic flavour without that strong raw garlic taste.
The Benefits of Garlic
Garlic has a long history of providing health and medicinal benefits. It is packed full of micro nutrients including maganese, Vitamin B6, vitamin C, selenium and fiber. Throughout history, garlic has been used for medicinal purposes, including a treatment for the common cold. It has also been used to treat hypertension and improve cholesterol levels.

- 1 or more heads of Garlic
- Olive oil
Serving Suggestions
Add to your homemade mayo for a delicious aioli. Roasting the garlic first softens the flavour and adds a sweeter taste.
Add to any homemade sauces, dressings or marinades. It’s delicious added to some oil and vinegar for a salad dressing. We also use it to marinate our keto marinated BBQ prawns.
Add it to the dressing on our Keto Asian Chicken Noodle Salad.
Use in place of fresh garlic in any recipe for a more subtle flavour.
Use when making flavoured butter to serve with your steak or fish.
Steps
- Pre-heat oven to 200 degree Celsius
- Remove the outer papery skins of the garlic heads
- Slice off the top of the garlic head to expose all the cloves, approximately 1/4 of the head is removed
- Drizzle with 1-2 tsp of olive oil to cover the exposed garlic cloves
- Wrap in foil and place in the oven for 40-60 minutes
- The garlic is ready when it is completely soft. The time varies depending on the size of the bulbs you have
- Allow the garlic to cool and then squeeze the base of the clove to remove the flesh
- Store in the fridge for 1-2 weeks, or freeze
