Cauliflower rice is a staple for a lot of people living the keto lifestyle. It has become so popular in the last couple years, you can even find it pre-packaged in the vegetable section of the supermarket. We have prepared this step-by-step guide to show you how to make cauliflower rice at home.
How to make cauliflower rice
Cauliflower rice is very easy to make yourself, so save yourself some extra dollars and make your own. All you need is a food processor and a microwave, oh and obviously a cauliflower. Butter chicken and cauliflower rice is a dish we love to serve family and friends when entertaining.
Try adding some fresh herbs or your favourite spices to your cauliflower rice for some extra flavour. If we are serving it with a curry I love to stir through some fresh coriander (cilantro) once it is cooked. If you are a cauliflower fan check out how to make creamy cauliflower mash here.
Don’t have a food processor?
Neither do we! We use our stick blender as it is so versatile and comes with a bowl attachment. The bowl attachment is so handy as it is a mini food processer, without taking up all the cupboard space of a traditional food processor.
We love our stick blender as you can use it to whizz up your bulletproof coffee and it is much less cleaning up compared to using a blender in my opinion. It is also perfect for making homemade mayonnaise or a quick and easy hollandaise sauce.
Cauliflower is the new black
If you are new to eating low carb you will find out pretty quickly that cauliflower is pretty much the darling vegetable around here. It is used in a lot of recipes to substitute for the much missed potato. You will see cauliflower mash, cauliflower ‘fauxtato’ salad, cauliflower hash browns, cauliflower steaks, cauliflower toast and of course cauliflower rice.
There are a lot of claims that you will not notice the difference between cauliflower hash browns and the original potato version for example. Now I wouldn’t go that far, but it certainly is a good substitute. Remember cauliflower naturally has more water than potato so it is always going to have a slightly different texture, and it also tastes different. So you may need to adjust your expectations sometimes.
Equipment
- Food processor (I use the small bowl attachment of my stick blender)
- Microwave
Ingredients for making cauliflower rice
- Cauliflower
- Salt, pepper and butter to season (use olive oil or ghee for a dairy free option)
Serving Suggestions for cauliflower rice
Substitute this in anywhere you would normally use rice. It’s great to make some to have with indian takeaway or to serve with curries or stir fries.
We love cauliflower rice on the side of our Zest butter chicken.
Make Cauliflower Fried Rice. Dan misses fried rice from the local Chinese takeaway and has found this to be a decent substitute.

Steps for how to make cauliflower rice
- Cut the cauliflower into chunks that will fit into your blender bowl
- Pulse in blender until texture is like a course grain. We usually would pulse 5-6 times and end up with the texture below
- Place blended cauliflower in a microwave safe bowl. Cook on high for 3 minutes and stir. Then microwave in 2 minute increments until cooked. You are looking for the texture to be softened and not crunchy. The amount of time needed in the microwave depends on the amount of cauliflower you are cooking. We used half a small cauliflower and needed to cook it for 6 minutes
- Once cooked season with, salt, pepper and butter or ghee to taste
