    Ham and cheese frittata

    This ham and cheese frittata is a simple recipe that is a real crowd pleaser. Perfect for using up your leftover leg ham from Christmas or Easter!

    This ham and cheese frittata is perfect to serve for breakfast, lunch or dinner. It can be a lighter meal on it’s own or served with a garden salad or roasted vegetables for a more substantial meal. Frittata’s can be served cold or hot, so it is a great make ahead meal option and perfect for packed lunches or picnics. If you have leftover leg ham from Christmas or Easter, then you need this ham and cheese frittata in your back pocket.

    This ham and cheese frittata is perfect to serve for breakfast, lunch or dinner. It can be a lighter meal on it's own or served with a garden salad or roasted vegetables for a more substantial meal.

    Frittatas are so versatile

    Frittatas are basically unfolded omelette that usually contains chopped vegetables and meats. They can be cooked on the stovetop, in the oven or a combination of both. We find it easier to cook it completely in the oven.

    Not only are they delicious, but frittatas and crustless quiches are also so versatile. You can include just about any vegetable, cheese or meat combination, they can easily be made vegetarian, reheat well and can be eaten any time of the day. We have enjoyed frittatas for breakfast on the go (they travel so well), work lunches or an easy dinner with a side salad.

    Using up leftover leg ham

    A glazed leg of ham is a very popular Christmas dish here in Australia, but that usually means there is a lot of leftover ham! Dan’s family tradition is to have sliced leg ham on toast for breakfast, so she will be enjoying that after Christmas.

    Apart from this ham and cheese frittata, some of our favourite meals to make with leftover leg ham are savoury muffins, fried rice, toasted sandwiches, omelettes, add it to Mac & cheese, in a creamy mushroom pasta, on crackers with pickles – so many options!

    Steps for making ham and cheese frittata

    Whisked eggs, cream and seasoning in a pyrex jug with a whisk.
    Whisk together the eggs, cream and seasoning.
    All the ingredients for the ham and cheese frittata in a pie dish ready for the oven.
    Pour the egg mixture over the ham and it is ready for the oven.

    Tips & Suggestions

    • It can be easier to put the pie dish on a baking tray and then place it in the oven. It is easier to get it in and out of the oven that way.
    • If you don’t have cheddar cheese, you can use any gated cheese you have on hand or prefer.
    • The volume of a 9.5 inch pie dish is around 6 cups. So any oven proof baking dish that can fit 6 cups will work.
    • Make sure you let the frittata cool before cutting and removing it from the dish. This will make it so much easier to take out.
    • This frittata keeps well in the fridge. We like to cut it into slices and store it in airtight containers. It can be frozen, but it may be a bit watery once defrosted, so we prefer not to freeze it.

    Ham, cheese and eggs are basically a match made in heaven, which is why we love this ham and cheese frittata! We love to make this frittata as meal prep, so that we have some breakfasts or lunches ready for during the work week.     Ingredients

    • 300 g leg ham, chopped
    • 4 spring onions, chopped (green onions/scallions)
    • 100 g cheddar cheese, grated (1 cup, firmly packed)
    • 10 eggs
    • 1 cup pure cream (heavy whipping cream)
    • 1 tsp salt
    • ½ tsp cayenne pepper

    Instructions

    • Preheat your oven to 180C/375F.
    • Sprinkle the chopped ham in the bottom of a 9.5inch/24cm round pie dish and spread evenly.
    • Sprinkle over the chopped spring onions and grated cheese.
    • In a large jug or bowl, whisk together the eggs, cream, salt & cayenne.
    • Pour the egg mixture over the ham. Place in the oven and cook for 40-45 minutes.
    • It is ready when it is golden brown all over and cooked through. You can stick a knife in the middle to check it is set all the way through.
    • Remove from the oven and set aside to cool for 5 minutes. it will deflate as it cools.
    • It can be served hot, warm, room temperature or cold. It will be easier to slice if it has cooled and then been refridgerated.

    Notes
