This ham and cheese frittata is perfect to serve for breakfast, lunch or dinner. It can be a lighter meal on it’s own or served with a garden salad or roasted vegetables for a more substantial meal. Frittata’s can be served cold or hot, so it is a great make ahead meal option and perfect for packed lunches or picnics. Frittatas are so versatile
Frittatas are basically unfolded omelette that usually contains chopped vegetables and meats. They can be cooked on the stovetop, in the oven or a combination of both. We find it easier to cook it completely in the oven.
Not only are they delicious, but frittatas and crustless quiches are also so versatile. You can include just about any vegetable, cheese or meat combination, they can easily be made vegetarian, reheat well and can be eaten any time of the day. We have enjoyed frittatas for breakfast on the go (they travel so well), work lunches or an easy dinner with a side salad.

Using up leftover leg ham
A glazed leg of ham is a very popular Christmas dish here in Australia, but that usually means there is a lot of leftover ham! Dan’s family tradition is to have sliced leg ham on toast for breakfast, so she will be enjoying that after Christmas.

Tips & Suggestions
- It can be easier to put the pie dish on a baking tray and then place it in the oven. It is easier to get it in and out of the oven that way.
- If you don’t have cheddar cheese, you can use any gated cheese you have on hand or prefer.
- The volume of a 9.5 inch pie dish is around 6 cups. So any oven proof baking dish that can fit 6 cups will work.
- Make sure you let the frittata cool before cutting and removing it from the dish. This will make it so much easier to take out.
- This frittata keeps well in the fridge. We like to cut it into slices and store it in airtight containers. It can be frozen, but it may be a bit watery once defrosted, so we prefer not to freeze it.

Ingredients
- 300 g leg ham, chopped
- 4 spring onions, chopped (green onions/scallions)
- 100 g cheddar cheese, grated (1 cup, firmly packed)
- 10 eggs
- 1 cup pure cream (heavy whipping cream)
- 1 tsp salt
- ½ tsp cayenne pepper
Instructions
- Preheat your oven to 180C/375F.
- Sprinkle the chopped ham in the bottom of a 9.5inch/24cm round pie dish and spread evenly.
- Sprinkle over the chopped spring onions and grated cheese.
- In a large jug or bowl, whisk together the eggs, cream, salt & cayenne.
- Pour the egg mixture over the ham. Place in the oven and cook for 40-45 minutes.
- It is ready when it is golden brown all over and cooked through. You can stick a knife in the middle to check it is set all the way through.
- Remove from the oven and set aside to cool for 5 minutes. it will deflate as it cools.
- It can be served hot, warm, room temperature or cold. It will be easier to slice if it has cooled and then been refridgerated.
