She has tried a few different versions, using different things as the sheets including zucchini, eggplant and konjac pasta sheets. None of these really gave you that real pasta feel. Easy Keto Lasagne

Ingredients
Cheese Sauce
- 1 cup pure cream (heavy whipping cream)
- 1/4 cup parmesan cheese, grated
- 50 g butter, cubed (3 tbsp)
- 100 g cream cheese, cubed (3.5oz)
- 1/2 tsp garlic powder
- 1-2 pinches cayenne pepper
- salt & pepper
- 2 egg yolks
Bolognaise Sauce
- 100 g streaky bacon, chopped
- 500 g beef mince
- 500 g Keep it Cleaner pasta sauce
Lasagne Assembly
- 2 pkts Eskal Deli vegetable pasta
- 150 g tasty cheese, grated
Instructions
Cheese Sauce
- Add all ingredients, except the egg yolks, to a small saucepan and heat over medium
- Whisk to combine and let simmer for a few minutes to combine and thicken slightly
- Season with salt and pepper to taste and set aside to cool
- Once the sauce has cooled, whisked in the egg yolks until combined
Bolognaise Sauce
- Heat a large frying pan over medium-high heat, once pan is heated add bacon
- Cook the bacon for 4-5 minutes or until it starts to brown
- Add the mince to the pan and break up until you have small pieces of mince. Cook the mince until browned
- Add the pasta sauce and bring to a simmer. Cook for 5-6 minutes for the sauce to reduce slightly
Lasagne Assembly
- Pre-heat oven to 200C/400F
- Using a square 9 inch baking dish, place half of the meat sauce in the bottom of the dish
- Top the sauce with a layer of the lasagne sheets
- Place half of the cheese sauce on top of the lasagne sheets
- Top the sauce with a layer of the lasagne sheets
- Repeat the same layering a second time. On top of the last layer of lasagne sheets, spread the grated cheese evenly
- Place in oven and cook for 30 minutes or until cheese is bubbling and golden brown
- Remove from the oven and set aside for 5-10 minutes to cool slightly. This will help with serving the lasagne in slices
