These oven-baked curry meatballs had to be included in our August winter warmer series this year, as they really fit the bill. You and your family will love this curry meatball recipe as it is so warming and tasty and packed with extra veggies. We love cooking things in the oven during winter as it warms the house and fills the air with the aroma of a yummy dinner. We also find it easier to cook these curry meatballs in the oven rather than pan-frying them, as it is hands off and less messy.

Meatballs are actually really versatile as you can use a variety of minced meat, we have recipes using pork, beef and chicken. Mae Ploy – Our favourite Curry Pastes
We were very excited a few years ago to come across the Mae Ploy brand of curry pastes at our local Asian grocery store! This brand is amazing. Not only is it delicious, but it uses very clean ingredients with no seed/vegetable oils and sugar in sight. We have tried a lot of their flavours and really like the yellow curry, red curry and panang as well as the massaman, which we used in this oven-baked curry meatball recipe. We have also found that it lasts a really long time in the fridge, which is great, as it is not something that we are using on a daily basis.
Check out your local IGA or Asian grocery store to see if you can find the Mae Ploy brand, as it really is the best store bought option. If you are looking for a readily available supermarket brand, we like the Valcom brand too.
Tips
- We used the Mae Ploy massaman curry paste in this recipe, but you can use your favourite curry paste, or whatever you have on hand.
Suggestions
- We like to serve these oven-baked curry meatballs with rice and some steamed broccoli, but they would also be great with cauliflower rice, roti or your favourite steamed vegetables.
Make it low carb
- This recipe is naturally low carb, you will just need to serve it with low carb side dishes. We recommend cauliflower rice and/or steamed green veggies.

Oven-baked curry meatballs
As we have said, we love how fuss-free these oven-baked curry meatballs are. Cooking them in the oven, rather than pan-frying them is less work and less mess. Considering they only use a few ingredients, they are still packed with flavour. We like to use grated pumpkin in these curry meatballs to pack in extra veg, keep them moist and add a little natural sweetness.

Ingredients
- 1 large brown onion, sliced
- 1 red capsicum, sliced
- oil (we use avocado)
- 500 g beef mince
- 1 tsp salt
- 1 tsp cracked black pepper
- 150 g pumpkin, grated (any variety)
- 2 tbsp massaman curry paste
- 1 can coconut cream (400ml)
- 150 g baby spinach leaves
To serve
- coriander leaves
- peanuts, chopped
Instructions
- Preheat the oven to 200C/400F.
- Place the onions & capsicum in the bottom of an oven-proof baking dish. Drizzle with a little oil and then toss to coat, set aside.
- In a bowl, place the beef mince, salt, pepper and grated pumpkin. Work the mixture together really well with your hands until it is well combined.
- Roll the mixture into approximately 20 meatballs, a heaped tablespoon in size. Place the meatballs in the baking dish on top of the onions & capsicum.
- Bake the meatballs in the oven for 20 minutes.
- While the meatballs are baking, prepare the curry sauce.
- Place a saucepan on medium heat and heat 1 tablespoon of oil.
- Add the curry paste and cook for 2-3 minutes, until it is fragrant and cooked through.
- Add the coconut cream and stir to combine, until it is smooth. Turn the heat off.
- After the 20 minutes, remove the meatballs from the oven. Pour over the curry sauce.
- Return the meatballs to the oven for 15-20 minutes, or until the sauce has reduced slightly.
- Remove from the oven and stir through the baby spinach to wilt.
- Garnish with peanuts and coriander leaves as desired.

Love this recipe – fixes my cravings for massaman curry without the potato. I don’t use any coriander but the chopped nuts on top gives it a real crunch. Rich and delicious.
